Nick reflected a long time before he said ILY specifically to Andi.  In addition to telling her that he loved her, he also wanted to give her reasons why he loved her.  Many men would simply said those 3 words or say something else more generic (like I see a future with you; You're the one for me, etc) Nick actually thought about his feelings and tried to figure out if logically they made sense.  

Yes, the scene on the FD wasn't the smoothest moment in romantic history, but that's just the real life aspect of what we were watching. I still remember the first time I told my now-DH that I loved him.  I hate to admit it, but I was equally as awkward.  Similar to Nick, I spent a lot of time inside my own head trying to discern what I was actually feeling. The first time Nick said those 3 words, they didn't just roll off of his tongue in a moment of passion.  They were said with intention in order to communicate something important to Andi.  He loved her and he thought they were compatible together. Now, you could say that he sounded stiff, but I think it was nerves.  If you listen very carefully as they kiss after he tells her this, he kisses passionately and says I love you so much  with great feeling.  Sexy moment, imo.

As far as using the same phrases with Hy as he did with Andi, in a moment of nervousness (as in meeting your potential FIL for the first and last time before you propose to his daughter) people often rely on simple, repetitive, and rehearsed phrases.  Especially an introverted person, for whom words may not flow as easily in the heat of the moment.  I didn't think Nick sounded anything like a salesman, rather he was simply nervous, most likely intimidated, and a bit overwhelmed.  To be honest with you, just the thought of Hy scares the bajeebies out of me.

Nick definitely is not everyone's cup of tea and I don't think I can or want to change others' opinions of him.
