He was led to believe that Lauren would not accept a proposal whether due to family reaction at HTD, producers planting seeds of doubt, whatever and went with what he considered a safe choice because he had to choose someone to propose to and did not want to face a rejection. 
He chose Becca, realized he made a wrong choice. He broke it off and will now see what happens in real life with Lauren.

What really happened:

After not going with Peter, the show made it very clear (contract?) that if they gave it to Arie there would be an engagement at the end.
Lauren wanted to be with Arie but would not accept his proposal at this time. Arie knew this, the show knew it, and Lauren knew it. Everyone had a problem with this. Faced with this dilemma, they talked to Becca (who didn't want to be engaged to Arie knowing he was in love with Lauren).
In exchange for becoming the next bachelorette, Becca agreed to go through with an engagement and a quick breakup - getting what she wanted, giving the show what they wanted and then some, and Arie and Lauren get what they each wanted.

Lauren's personality continued to be as plain and basic as ever. Her HTD didn't give him the warm and fuzzies so in his mind, there were still risks involved. If he had fallen that deeply in love with her (Emily kind of love), he would have proposed. I don't see him listening to anything other than his head the last half of the season. Becca K boyfriend showed up, she turned down his proposal and Arie could not send the girl home who had just stood up and said "NO" to a man she had cared for the last 7 years. What would most do in that situation if they are still unsure and have two choices? Arie likes safe.

Arie rewrote the ending when things didn't work out with Becca K and he didn't find them to be compatible. For all I know, TPTB talked him into contacting Lauren. She's the Emily he couldn't let get away. Lord, they have probably about brainwashed the boy at this point. Oh well, he made his bed. Now it's time to for him to watch them court the new "Ette". They are done with Arie, IMO.

IMO the switch is just Arie being arie - he kept saying he fell in love with Becca and Lauren - chose Becca proposed then as arie does can’t be with just one girl stalks the other girl on ig decided he is bored moved on to Lauren ( if he could he would keep Becca on the side but he can’t in this situation) will get bored with Lauren start ig stalking Becca m or some other random chick that keeps dm-ing him on ig - maybe marry Lauren but will keep being arie have some chick on the side - he is a cheater/ douche bag and imo ppl like this don’t change they love the feel of it (maybe this is what excites him- whatever - jmo

Absolutely and exactly IMO.

And if Becca choses not to take the Ette gig for any number of reasons and instead walks away from Bach nation what then?  Its because she chose to back out of a deal made with her?  Or could there have actually never been one to begin with and she was legitimately hurt in this whole thing?

Arie claims he “loved” two women and he’s all about the chase so Lauren was ahead in that department. But then Becca’s ex shows up and suddenly Arie can chase Becca. Since he “loved” her too and she looked better on paper, he proposed and she accepted. Arie then realized the chase is over now and he got bored as he does. So he starts stalking Lauren’s IG and calling her. He breaks up with Becca on camera because TPTB “forced” him too even though they really couldn’t prevent him from telling Becca before hand. He then turns to chasing after Lauren. Soon enough that chase will end and Arie will move onto another woman.

I think it depends on actually what kind of contract was or was not signed. 
My opinion is a) they don't have anything in writing until they have to, so nothing was signed and things were simply planted, implied etc. b) she would be one smart chickie to walk away from MF&CO. The show treats a cast person generally much better than as the lead. As a cast person there is a minibus with your name on it. As the lead you get your own charter bus.

Sorry was not trying to side track us with discussion, just curious how this big elaborate plan worked/explained things if she walked away.
