The rose ceremony takes place at La Fonda I think based on the picture of the girls in their rose ceremony garb sitting in front of a fireplace that I have matched to that location. 




Chris pacing (when he needs to think at the rose ceremony) is in a courtyard at LaFonda (the fountain is behind the little girls and the tiles match as well.)
So it looks like the girls and Chris are staying at the Buffalo Thunder about 14 miles north of Santa Fe. (maybe they got to go to the casino and lose a few dollars.) 
The rose ceremony is then moved into town at  La Fonda on the Plaza. The rose ceremony takes place in a wedding-type venue.

This is similar but not exactly Chris's room. I can't figure out where he and Carly are sitting with the fireplace behind them.
