Food - Recipes - Slow Cookers - Baking - Favourite Dishes
Since the holiday season is coming up I thought it would be a good time to share recipes. I bake a a lot for Christmas and I'll be starting probably next weekend. I'll start us off. I have never made this before, and it turned out delicious.
Crockpot Enchiladas
I used this recipe. Instead of the ground beef I used fresh Chorizo sausage meat. I also added black beans.

I love this thread and will be looking forward to it.

Thanks for bringing my favorite topic ... food ... on this "table".
In my region we celebrate San Martino (when a must turns into a wine) on 11th and traditionally we cook polenta with everything, sauerkraft - cabbage - lots of it (or turnip) and sausages, mushrooms, baccala (or white grilled polenta with salami or prosciutto) and frico ... I'm trying to find recipes in English, so here are some links:

Unfortunately I'm no expert in cooking like all the women in my family, I prefer baking and usually it's bread or cakes ... "potica" and "gibanica" are the most difficult to master "the right touch", so I'm still learning, that's why it's easier to make a "kuglof" ... which only now, searching it, i find it's Hungarian:

Recipe for Number 7.
Ingredients
1 cup butter, softened
1 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon grated orange zest
2 tablespoons orange juice
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped cranberries
1/2 cup chopped walnuts (optional)
1/2 teaspoon grated orange zest
3 tablespoons orange juice
1 1/2 cups confectioners' sugar
Directions
1Preheat the oven to 375 degrees F (190 degrees C).
2In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice. Combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and if using, walnuts, until evenly distributed. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Cookies should be spaced at least 2 inches apart.
3Bake for 12 to 14 minutes in the preheated oven, until the edges are golden. Remove from cookie sheets to cool on wire racks.
4In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners' sugar until smooth. Spread over the tops of cooled cookies. Let stand until set.

Sorry for the double post. HGL! I totally missed your post!!! Sounds fantastic, and mostly everything Italians eat all the time especially baccala at Christmas time. Baccala fritters are to die for!
We have polenta at my Mothers once every few months! Love it!

You are on a baking binge GA. Those look yummy. I may have to get my butt off the couch and go bake some goodies. For a while there I would binge bake at Christmas time...10 different kind of cookies. Maybe I'll dig out some of those recepies and post a few.
You could be the juiciest, most ripe peach, but there is still going to be someone who doesn't like peaches.

Sprite, that's what I do at Christmas time. I make between 10 and 12 different kinds. Then I package it all up. 5 platters, gift boxes, and various plates.
Some are for my offices, my mechanic and the dog groomers, Christmas Eve at my sisters, a couple of open houses I'm invited to, another family function, my neice and nephew and their families. Everyone looks forward to it. I have lists I've kept for the past 10 years of what I make, how many batches, and how many I get out of them. I go to the dollar store and buy Christmas platters and boxes, and make them real Christmasy.
I will post the finished product when I lay them all out on a table and pack them up.
Shortbread cut outs and Hungarian Kiflies are next.

I love food. But I can't bake to save my life. I prefer things that don't involve cooking. Here's one of my favorite quick and easy dips.
Bagel Dip
-16 oz sour cream
-1 cup Mayo
-1 package of beef deli meat (I use Buddig brand 2 oz pack) diced into small pieces
-1 tbs chopped onion (can omit if you would like)
- 1 1/2 tsp of worchestershire sauce
- 2 1/2 tsp dill weed
-2 1/2 tsp of dried parsley
-1 package of 6 bags (I use wheat but white works too)
Mix this all together in a bowl. Cut up bagels into bit size pieces and serve. This stuff is addicting so beware. I can finish a bowl in one day easily. Oops. It's very easy to double or triple to serve a larger group.
I have a great stuffed baked potato recipe too.

Looks delicious umngirl. I would eat that for sure and I wouldn't share.
I'd be interested in your baked potato recipe. Just the other day I thought I have not made baked potatoes in ages.
Now that the cold weather is approaching, I use my crockpot a lot, baked potatoes is another great comfort food.

GA, your fudge and cookie bars look delicious. I love that you make so many varieties and gift box them. I can't wait to see more photos!
