Does this eliminate Nick because he came in midway? Is she maybe referring to someone that was there all along then, steady and supportive the entire time? Ben? Chris?

I don't think it eliminates anyone, Beagle. The leads have those answers planned and Kaitlyn may have been answering that based on the season she was in rather than risk giving something away.

I don't recall Andi making specific statements about timing/readiness for marriage & children.  Does someone recall? 

I don't put a lot of stock in things like this personally. 
The more I read of Kaitlyn's "interviews" the more it seems she answers according to her mood.
